These HIGH-PROTEIN oatmeal cookies are the perfect quick and easy sweet treat. We use our Chocolate Coconut Protein Almond Butter to provide the perfect consistency that makes these cookies melt-in-your-mouth yummy, and this butter having 10 grams of plant-based protein per serving gives these cookies an added bonus!
They are SOY-FREE, and HIGH-PROTEIN
INGREDIENTS:
- 1 1/4 cup rolled oats
- 1 tsp baking powder
- Pinch of salt
- 1 cup whole wheat flour
- 1/4 cup unsweetened apple sauce
- 1 egg
- 1 tsp almond extract
- 4 tbsp melted coconut oil
- 1/4 cup Chocolate Coconut Almond Butter
- 1/4 cup maple syrup
- 1/3 cup dark chocolate chips
DIRECTIONS:
In a bowl, whisk together the oats, flour, baking powder and salt. In a seprate bowl, combine the applesauce, oil, egg, extract, Chocolate Coconut Almond Butter and maple syrup. Whisk well. Pour the liquids into the dry mixture and stir until combined. The dough should be sticky. Fold in the chocolate chips. Place in the refrigerator to chill for 30 minutes. Place a rack in the center of your oven and preheat to 350 degrees F. Line a baking sheet with parchment paper. Drop the cooled dough into medium sized balls and arrange on the baking sheet, leaving 1 inch of space around each. With your fingers, gently flatten them. Bake until the cookies are golden and firm around the edges - about 10 minutes. Let them cool then ENJOY!
