Coconut Cashew + Jelly Blondies - V / GF/ PF

The ultimate combo, the classic of all classics, made into a delicious brownie-like dish... There's nothing more to be said.

  • 1 cup Coconut Cashew
  • 1 ripe banana, mashed
  • 1 chia egg
  • 1/4 cup agave
  • 1/2 tsp baking soda
  • strawberry jam
  • 1/2 gluten free flour

Preheat oven to 350 degrees. Line an 8x8 pan with parchment paper and spray with cooking spray. Set aside. Combine all ingredients except for jam in a bowl and mix until smooth thick batter forms. Pour 1/2 of the mixture into the pan and spread evenly. Add a thin layer of jam, then top with the remaining batter. Bake for 20 minutes. Remove, let cool, and store in fridge for 1 hour before serving.
