Coconut Zucchini Oats

 Quick, healthy breakfasts have never tasted better... these zucchini oats are an easy way to get veggies in your breakfast. You can easily customize to your taste preferences (add fruit, chocolate, nuts, etc) AND it goes well with any of our nut butter flavors! We used Coconut Cashew, but I'd also recommend our Strawberry Cashew or even French Toast Pecan.

They are PLANT-BASED, GLUTEN-FREE and SUGAR-FREE

PREP TIME: 5 minutes
COOK TIME: 5 minutes
MAKES: 1 serving 

INGREDIENTS:

  • 1/3 cup oats
  • 2/3 cup oat milk
  • 1/2 smashed banana
  • 1 tsp coconut flour
  • 1 tsp coconut oil
  • 1/2 cup grated zucchini
  • 2 tbsp flaxseed
  • 4 tbsp Coconut Cashew Butter 

DIRECTIONS: 

  • In a pot, add oats and oat milk and bring to a gentle boil
  • Reduce to a simmer and add the coconut flour, coconut oil, mashed banana, grated zucchini (No need to squeeze the water out of the zucchini).
  • Add ground flaxseed
  • Periodically stir till it’s nice and thick.
  • Pour in bowl and top with Abby's Better Coconut Cashew Butter, berry jam of choice, cacao nibs, cinnamon, and enjoy!
