Dairy-Free Macadamia Cookies

These Dairy-Free Macadamia Cookies are the perfect quick and easy healthier cookie recipe. We use our Coconut Cashew butter, because we find that the flavor of cashew butter works best for cookies! You can use any of our cashew butters, if you don't like coconut (though you can hardly taste it). You can also make the recipe gluten-free by just using any gluten-free flour mix vs regular flour!

They are DAIRY-FREE and SOY-FREE

PREP TIME: 20 minutes
COOK TIME: 10 minutes
MAKES: 20 cookies 

INGREDIENTS:

  • 1 1/2 cup flour
  • 1 tsp baking soda
  • Pinch of salt
  • 1/2 cup coconut sugar
  • 1/3 cup melted coconut oil
  • 1/4 cup packed brown sugar
  • 1/4 cup Coconut Cashew Butter
  • 1 egg
  • 1 tsp vanilla extract
  • 3/4 cup chopped macadamia nuts

 

DIRECTIONS: 

In a medium bowl, whisk together the flour, baking soda and salt. In a large bowl, whisk together the coconut sugar, brown sugar, coconut oil, egg and vanilla for about 30 seconds. Slowly add in the flour mixture and mix until incorporated. Fold in the macadamia nuts. Transfer the bowl to the refrigerator and chill for at least 30 minutes. Preheat the oven to 350ºF. Line a large baking sheet with parchment paper. Scoop about 1 ½ to 2 tablespoons of the dough and drop on the prepared baking sheet. Bake for 10 to 12 minutes, until lightly browned on the edges. Let cool for about 10 minutes. SERVE!
