I'm sorry, can you make toffee gluten-free, peanut-free, AND vegan?
Yes, yes you can! Toffee is such an amazing invention. It was my goal to re-create it to fit YOUR health needs while still remaining the same delicious toffee that you remember.
Toffee is one of those candies that always included some of my FAVORITE things - caramel + chocolate! I liked its crunchy texture, as well as the soft chocolate that topped it. What better combo can you have? However, like with most classic treats, when I stopped eating junk and processed sugars I was left alone... with no toffee to comfort me:(. I assumed I couldn't make a healthy (yet tasty) toffee on my own. UNTIL, I created the Abby's Better brand and the nut butters that came with it.
I started testing my nut butters in different recipes and found THIS - a satisfying, surprisingly delicious toffee recipe that will help you forget about all the junk foo you've left behind. It's simple, and so worth it. A real crowd pleaser.
Ingredients:
1 cup whole toasted almonds
1 cup Abby's Better Date Pecan
1 cup of vegan butter (I used Earth Balance)
1 cup of coconut sugar
1/4 tsp salt
1 tsp vanilla
2 cups vegan chocolate chips
1/2 cup chopped pecans
Instructions:
Place the toasted almonds in a baking sheet with tin foil. Place the butter, sugar, vanilla, and salt in large saucepan and melt over medium heat (stir frequently). As ingredients combine, add the Date Pecan and keep stirring until you get a golden brown color. Pour over almonds on sheet. Let sit for 3 minutes then sprinkle with chocolate. Let sit until chocolate is melted then spread over toffee. Top with pecans and put in freezer to completely harden. Then, EAT EAT EAT!
