July 4th Nut Butter Chex Mix - V / GF / PF

It's the 4th of July, which means time to celebrate with friends.. and delicious food!

4th of July is a wonderful holiday for so many reasons. Not only is it a day to get off work and spend time by the pool or on the lake and watch fireworks, it's also a day we can celebrate the declaration of independence and the many freedoms we are blessed to experience today. What better way to do that than with this RED, WHITE, AND BLUE chex mix recipe?!?! Perfect for a snack at any party you're attending. Oh, and it's ALSO vegan, gluten free, and peanut free. 

Ingredients

5 cups of plain chex mix
3/4 cup of Strawberry Cashew nut butter
1/2 cup of freeze dried strawberries
1/2 cup of raspberries 
For the covered pretzels -
1 bag pretzels 
2 cups dairy free vanilla yogurt (Silk works well)
1 cup powdered sugar
For the candied cahsews -
1 cup unsalted cashews
1/2 cup granulated sugar
1 tbsp vegan butter
1/2 cup coconut flour
Directions: 
First, for the cashews, add the butter to a small saucepan over medium heat and let it melt. Add the sugar and cashews. Stir the mixture frequently (it burns easily so watch it closely) until the sugar caramelizes over the nuts. Once all the sugar has melted and coated the nuts spread them onto a plate or piece of parchment paper so they don't all stick together. sift the coconut flour over the cashews and let cool to allow sugar coating to harden. Set aside for now.
Then, for the pretzels, in a large mixing bowl mix the powdered sugar into the yogurt with a hand blender. dip the pretzels, one at a time into the yogurt and place them on a wire cooling rack and place in freezer. Allow frosting to harden for 3-4 hours before you do the following steps.
Process the strawberries in a food processor until powder forms. Pour chex mix into a large serving bowl and cover with the powdered strawberries. Stir in the Strawberry Cashew, raspberries, and candied cashews. Remove pretzels from freezer and add to bowl as well. Cover everything with MORE Strawberry Cashew if desired, and SERVE!
