Now let's he honest.. everybody needs cookies in their life. Plain and simple. There is nothing more satisfying then biting into a warm, fresh-out-of-the-oven cookie. It's not just about taste either, it's about memories of your childhood, and the cookies that your mom made for you on Sunday's or when she was in a good mood;).
Personally, I have always been a fan of oatmeal cookies. I have love the taste and texture, and there is something about putting 'oats' in a cookie that makes you think it is healthy. But let's be frank with ourselves... most oatmeal cookies we buy and eat ARE NOT healthy at all. Now, there is nothing wrong with a treat every once in a while! I am always down to indulge in a deadly dessert. But I also want cookies on a day to day basis - ones that I can enjoy but not feel guilt about.
That's why I created these GUILT-FREE Strawberry Cashew Oatmeal Cookies, using the one... the only... STRAWBERRY CASHEW! These are perfect for breakfast, as a snack, to take to the gym or work, or just about ANYWHERE you can eat things (which is everywhere for me;).
ingredients:
1 c rolled oats
1 large banana
2 TBS maple syrup
3 TBS Strawberry Cashew
1 tsp vanilla
Instructions:
process all ingredients in a food processor until well combined. Roll into balls and place onto a non-stick cookie sheet, press down for shape, and bake at 350 F until golden and starts to firm.
Easy. Delicious. No regrets. Now that's my kind of cookie!
